Squamish Nation chef Paul Natrall introduces Bannock at Home

The founder of Mr. Bannock Indigenous Cuisine food truck now offers a DIY bannock-making mix

IN 2018, SQUAMISH Nation chef Paul Natrall launched Mr. Bannock Indigenous Cuisine, Metro Vancouver’s first Indigenous food truck.

Emblazoned in red, black, and white designs by Heiltsuk artist KC Hall, the mobile eatery offers items such as Indian tacos, bannock burger, and bannock dusted with cinnamon and brown sugar.

Now, Natrall is offering Bannock at Home, a mix kit that makes it easy for people anywhere in Canada to whip up a batch of fry bread at home.

“One of my best memories growing up as a kid was going to outdoor school and making bannock on a stick and using honey and peanut butter,” Natrall tells Stir. “These days with the family, we do enjoy bannock on the stick but use Nutella and honey. It’s an awesome experience everyone should have.” 

The process is simple: just add water to the mix and you can bake or fry it, or even use it as batter for scones, potato buns, and more. The bread can be savoury or sweet; Natrall enjoys bannock pizzas and bannock waffles.  

Natrall has always had an interest in cooking, a passion he developed early in life, spending much of his childhood watching his grandmothers make meals at home on the unceded and traditional Squamish Nation territory of the Coast Salish peoples. He trained in the Aboriginal cooking program at Vancouver Community College and went on to become a member of Aboriginal Culinary Team Canada for the Culinary Olympics in 2012 in Germany.

Mr. Bannock also has a new app on Google Play store, with features like recipes, videos, and discount codes. Mr. Bannock food truck is currently open Fridays from 4 to 6:30 pm 442 West 1st Street in North Vancouver.
