For Diwali, the Indian Pantry offers Maharashtrian feasts

The vegan or non-vegetarian tasting menus are for two to celebrate the Festival of Lights

TO CELEBRATE DIWALI, Vancouver’s Indian Pantry is offering a special Maharashtrian tasting menu, with vegan and non vegetarian options. It’s a collaboration between Indian Pantry chef Tushar Tondvalkar and Aarti Ubhe, head chef of Urban Tadka. “Diwali for me brings a lot of light into my life, metaphorically and symbolically,” says Ubhe, who hails from Pune, Maharashtra.

The duo’s two-person vegan tasting menu ($50) consists of Kothimbir Vade, a cilantro and chickpea flour fritter seasoned with spices and served with mint chutney; Batatachi Bhaji potato cooked with cumin, green chilli and curry leaf;  Chanyachi Usal ani Vade black chickpea cooked with caramelized onion and coconut along with malvani masala, served with traditional flat bread; Varan Bhaat; yellow lentil stew cooked with fresh coconut served with rice; and Gajjar ka Halwa, grated carrot cooked with almond milk and dried fruits.

The nonvegetarian tasting menu for two ($65) features Kothimbir Vade and Batatachi Bhaji; boneless Chicken Sukka, cooked in caramelized onion and coconut along with coastal masala; Mutton Rassa, bone-in goat cooked with malvani masala and brown coconut served with traditional bread; and assorted sweets by Mithai & Co.
