Vancouver Michelin chefs guest-star at Fairmont Pacific Rim’s Patio Pop-Up, all summer
The outdoor dining series takes place in an urban oasis
FAIRMONT PACIFIC RIM’s patio is popping up with Michelin talent this summer, as it launches a series of culinary collaborations.
A rotation of chefs from six of the guide’s locally recognized restaurants will be showcasing a feature seasonal dish at the outdoor living room. The oasis, a partnership with Wesbank, comes complete with lounge-style seating, picnic tables, faux and real foliage, a cross-breeze, heaters, and live music.
Published on Main chef Gus Stieffenhofer-Brandson kicks things off from June 1 to 4. Burdock & Co chef Andrea Carlson is in the house June 15 to 18; Anh & Chi chefs Lý Nguyen and Vincent Nguyen are stirring things up June 29 to July 2; Botanist chef Hector Laguna (the host chef) creates the special from July 13 to 16; L’Abattoir chef Lee Cooper comes in from August 10 to 13; and Bacaro chef Michael Zafirian steps in from August 24 to 27.
For every feature chef dish sold, a portion of proceeds will be donated to the BC Hospitality Foundation.
Along with the weekly rotation of guest chef dishes, executive chef Damon Campbell’s food truck will be on-site serving a summery menu on the patio. Creative beverage director Grant Sceney will be making Malfy Gin cocktails (including G&Ts, Spritzes, and other summertime sippers), while serving up a range of craft beers and local and international wines.
The Pac Rim Patio will be open Wednesday to Sunday from 12 to 8 pm, with live music on Fridays and Saturdays until 8 pm, and on Thursday and Sunday to 6 pm. See here for more information.
