Canadian Culinary Centre presents Hot Chefs & Cool Jazz 2023 on April 14 at Fairmont Pacific Rim
LIVE COOKING STATIONS and live jazz will be paired with wines from Mission Hill Family Estate at the 2023 edition of Hot Chefs & Cool Jazz at Fairmont Pacific Rim, all in support of Junior Culinary Team Canada.
Proceeds from the event will support the team as it prepares to compete at the 2024 Culinary World Olympics, the largest, longest-running international exhibition of culinary arts.
Fairmont Pacific Rim executive chef Damon Campbell is hosting the gala fundraiser, which also features chefs Scott Jaeger of Peartree Provisions; Alex Chen of Wild Blue/Boulevard Kitchen and Oyster Bar; Rod Butters of Kelowna’s RauDZ Creative Concepts Ltd; Nutcha Phanthoupheng of Steveston’s Baan Lao Fine Thai Cuisine; Hamid Salimian of The Good Flour Co; Fumiko Moreton of Sheraton Vancouver Wall Centre; Vish Mayekar of Pepino's Spaghetti House; Malindi Taylor of Fanny Bay Oysters; Mission Hill’s Patrick Gayler; Derrick Sibayan of Holts Café; Marriott Pinnacle Hotel’s Edison Antejos; JC Felicella of Global Gourmet Foods; Garett Kemp of North Vancouver’s Pier 7 Restaurant; JW Marriott’s Cynthia Leung; Tina Tang of Kelowna’s Erica Jane Restaurant; The Vancouver Club’s Alamu Durand; and Fairmont Pacific Rim’s Clarissa Roque.
Roque is co-captain of Junior Culinary Team Canada alongside Toronto’s Daniel Calabrese. Also on the team are chefs Chloe Sy (Kelowna), Ottis Crabbe (Victoria/Ucluelet), and Joey Mai (Winnipeg).
The Fairmont Pac Rim’s Campbell was team captain for Culinary Team Canada in 2005 and 2006, leading it to gold medal victories at the World Culinary Olympics in Germany. In 2003 and 2004, he was also a silver medal winner as a member of Team British Columbia with numerous gold and silver wins across Canada.
The Miles Black Quartet’s namesake is a sought-after Vancouver-based composer, songwriter, arranger, and multi- instrumentalist, session musician, and musical-theatre director who has worked as a music therapist and is an educator and clinician at Vancouver Symphony Orchestra School of Music. Since 2009, he has been a member of Triology, which features Bill Coon on guitar and Jodi Proznick on bass. He’s also a member of modern-jazz ensemble Altered Laws; the Oliver Gannon Quartet; and the Mike Allen Quartet, known as the Faculty Jazz Collective at Western Washington University.
Hot Chefs & Cool Jazz will also celebrate Community Catering Team Canada, which recently placed 2nd in the world, consisting of captain Tina Tang (Kelowna) and Vancouver’s Warren Chow, Heejo Jung, and Leah Patitucci.
